Using Hickory smoking wood creates a sweet yet strong bacon type flavour. The smoke can be pungent, but it will add a nice strong flavour to just about all meat cuts. Made especially popular by Texas style pork ribs.
Chunks burn more slowly than chips if you are looking for a long slow cook. Often a chink or two the size of an egg is all that is needed for a lot of flavour.
